Sweet Potato Biscuits

cooked mashed sweet potato ( about 1 medium)

butter, melted

light brown sugar

PREHEAT oven to 400°.

COMBINE sweet potato, butter, brown sugar, and cinnamon. Beat at medium speed with an electric mixer until blended.

COMBINE flour, baking powder, and salt. Stir well. Stir soda into buttermilk. Combine sweet potato mixture, flour mixture, and buttermilk mixture in a large bowl, stirring just until dry ingredients are moistened. Turn dough out onto a lightly floured surface, and knead gently 4 to 6 times.

ROLL dough to 1/2" thickness. Cut with a 1 1/2" biscuit cutter. Place on ungreased baking sheets. Bake at 400° for 12 to 15 minutes or until golden brown.

Baking the sweet potato in a hot oven for about 1 hour for these fluffy biscuits create a sweet, caramelized flavor you won't get if you microwave it. Makes 3 dozen.
