Super Special Spinach Pie

(6 oz) packages fresh baby spinach

cup
butter

Tbs
all-purpose flour
tsp
salt
pepper
garlic powder

large eggs, lightly beaten
3/4
whipping cream
1/2
(2 ounces) shredded Parmesan cheese

In a large skillet melt butter over medium heat. Add spinach and cook just until wilted. Set aside.
In a large mixing bowl whisk together eggs, parmesan cheese, flour, salt, pepper and garlic powder until well blended. Whisk in whipping cream.
Add sauteed spinach along with any juices from sauteeing, stirring well.
Pour mixture into a lightly greased 9" pie plate

Bake at 350° for 25 minutes or until pie is set. Let stand 10 minutes. Cut pie into wedges and serve. Makes 8 servings.
This is a creamy quiche-like pie without the crust.
