Whole Wheat Pastry Flour

Bobs Red Mill Oat Bran Cereal

brown sugar

banana, mashed

1/2

cup

low fat yogurt, plain or vanilla

egg whites or 1 whole egg

cooking oil

vanilla

dates, chopped

1/2

cup

walnuts, chopped

Mix together dry ingredients.

Mix liquid ingredients in separate bowl.

Combine the two mixtures and stir until moistened.

Lightly grease or line muffin tin with paper cups. Fill 2/3 full.

Bake at 400°F for 18-20 minutes. Makes 12 muffins.
