Carrot Spice Muffins

whole wheat pastry flour

brown sugar

yogurt (or buttermilk)

oil or melted butter

vanilla

carrots, grated

1/2

cup

raisins (optional)

1/2

cup

chopped nuts (optional)

Measure dry ingredients into a large bowl. Mix wet ingredients in another bowl with carrots, raisins and nuts. Add to dry mix, stirring only until flour is moistened. Place in greased muffin tins and bake for 15 minutes at 400°. This makes delicious, moist muffings.

Suggested serving with Apple Butter on top.
