Bran Flax Muffins

Bob's Red Mill Flaxseed Meal

carrots, shredded

apples, peeled and shredded

raisins (optional)

nuts, chopped

milk

eggs, beaten

Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.

Stir in carrots, apples, and raisins if desired, and nuts.

Combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients. Stire until ingredients are moistened. Do not over-mix.

Fill muffin cups 3/4 full. Bake at 350° for 15-20 minutes. Makes 18 muffins.

Even though these muffins have no added fat, they are quite moist and they freeze well. Suggested serving with Apple Butter.
