Beef Teriyaki

soy sauce (Kikkoman less sodium)

dry sherry

garlic cloves (or up to 7 cloves)

thin slices fresh ginger, smashed

fresh-ground black pepper, or more to taste

flank steak, scored

In a small bowl, mix together the soy sauce, sherry, sugar, garlic, ginger and pepper. In a non-reactive shallow pan, combine the steak and the sauce. Cover and refrigerate overnight.

Preheat the broiler.

Broil the steak, turning once, until medium-rare, about 5 minutes per side. Slice across the grain, as you would a London broil.

Serves 4 to 6. Recommend serve over "Oven Rice" recipe found in this cookbook.
