Beat egg whites until stiff. In a large bowl, beat yolks with milk. Add remaining ingredients, beating after each addition. Fold in beaten egg whites. Pour into lightly greased pre-heated (medium-hot, 375°) waffle iron and bake until it stops steaming.
Makes about 5 round waffles.

BUTTERMILK, SOUR MILK or YOGURT WAFFLES
Omit the milk and 1 tsp baking powder. Add 1 1/2 c buttermilk, sour milk or yogurt and 1/2 tsp baking soda. Make your own sourmilk by adding 2 tbsp lemon juice or vinegar to 2 c milk.
If you're in a hurry, use whole beaten eggs, but waffles won't be quite as light. Freeze leftovers and heat in the toaster for snacks or quick breakfasts.
