Potato Breakfast Casserole

medium potatoes

bacon slices, diced

cup
green onion, minced

swiss cheese, shredded

cottage cheese

eggs, beaten

tabasco sauce
parsley
Cook potatoes in boiling, salted water until tender. Peel and dice to make 3 cups.

Fry bacon. Remove and drain; reserve half for garnish.
Lightly brown green onion and potatoes in bacon drippings.
Combine onion and potatoes with bacon, swiss and cottage cheese, egg, salt and tabasco. Turn into shallow buttered 9x9" baking dish.
Bake at 400° for 15 minutes. Reduce heat to 350° and bake 15 minutes longer or until set. Garnish with parsley and remaining bacon. Makes 6 servings.
