Egg Plant Casserole

cream of mushroom soup

cup

mayonnaise

egg, beaten

large onion, chopped

1/3

cup

butter

cup

sharp cheese, grated

Peel, cook, drain, slightly mash seasoned eggplant. Mix together, sour (undiluted), mayonnaise, beaten egg, and onion. Mix with egg plant. Place in a buttered casserole dish. Top with cheese and 1/3 c butter. Optionally, you can use a little more cheese than called for.
