Black-Eyed Pea Soup

black-eyed peas

ham chunks (approx)

celery, diced

onion (large), chopped

carrots, chopped

Soak black-eyed peas in 6-8 cups of water overnight. Drain.

Bring black-eyed peas to a boil in 2 quarts of water. When water has started boiling, add chopped onion, ham, and pepper. Cook on medium until peas are tender, about 1 hour. After peas are tender, add celery and carrots. Pour into crock pot. Cook on low all day. To thicken soup, add flour and water mixture to desired consistancy.
