Amanda's Chicken Casserole

(5 oz) Chicken Rice-a-Roni

cooked chicken, chopped

onions, chopped

green bell pepper, chopped

pimento, chopped

cream of chicken soup

1/2

cup

mayonnaise

parsley, chopped

salt and pepper, to taste

1 1/2

cup

Monterey jack cheese, shredded

French-fried onions

Cook Rice-a-Roni using package directions. Add chicken, onion, green pepper, pimento, soup, mayonnaise, parsley, salt and pepper. Mix well. Pour into foil-lined casserole. Mix cheese and French-fried onions in bowl. Sprinkle over rice mixture. Bake in 375° oven, covered with foil, for 20 minutes. Bake, uncovered, for 10 minutes longer.
